The winemakers I have had the pleasure to work with are hot on organic principles of viticulture. Some of them are biodynamic wine producers, taking organic farming to an almost spiritual level. They treat their grapes like newborn babies; they talk to them, cherish them and give them the love and attention they need to ripen into juicy, succulent fruit ready for harvesting. Their wines are amongst the best in the country. Writer Pierrick Jegu and I have been working together on various assignments for Saveurs magazine across France, and we’re nowhere finished yet!
